Tradition with taste! South Africans love to camp out, winter and summer. This is a traditional cold weather treat. The combination of beef shin and lamb shank delivers outstanding meaty flavour. Prepare it in two phases for camping. Phase one can be done at home and frozen. Phase two, add flavour at the campsite and finish off the potjie.
Instructions. Heat the oil in the potjie and fry the onion, garlic and ginger until soft and flavoursome. Add the spices, stir and cook for about a minute. Add the mince gradually and fry until browned. Add the chutney, chopped tomato, potato cubes and carrots, season with salt and black pepper and add the stock.

    3. Method. Preheat your oven to 180ºC/350ºF/gas 4. In a heavy-bottomed ovenproof saucepan, heat a splash of olive oil and gently fry the onions, carrots, celery, garlic, herbs, porcini and cinnamon for 5 minutes until softened slightly. Meanwhile, toss the pieces of beef in a little seasoned flour, shaking off any excess.

Depending on the size of your beef cheeks, it will take 2.5 - 3.5 hours to get them tender, including 30 minutes with the lid off to reduce the sauce. Stir and coat the lamb in the mixture and place the lid of the potjie on the pot. Let the lamb brown for about 10 mins. 6. Add the herbs and spices and mix well. 7. Add the beef stock.
